The old post promised the essence of the Philippines in a donut. The true thing is smaller: the fruit that came up the ridge that morning, a glaze, heat.
We fry in small batches. If the board says mango, it is mango from a named farm, not a syrup from a drum.
Eat it on the deck before it cools. Pair it with a long black from Cordillera or a tablea latte.
There is no dozen to take down the hill that still tastes like the pass. Come for one. Come again.
