The ridge we keep

Started 2024. Net Zero 2050. Cut first, count every visit, grow what the ridge can hold, buy a credit only for the residual. Being on the books is a seat on that path — not a volunteer hour, not a CSR team.

Sustainability is duty and accountability. A miss is coached. A pattern is written — still with twin notice. We do not dock the wage for a compost caddy. We do not skip 13th month or service charge to fund a pin.

Our creed

One Direction, One Goal, One Kabesera Café

At Kabesera Café we are more than a team. We are a bayan — a community — moving in One Direction toward One Goal. We do not only serve food and coffee. We serve moments of connection, comfort, and home.

We do this by lifting the Filipino spirit of Bayanihan through the driving force of Malasakit. When you put on the house blacks, you lift the poles of the day’s work with the people beside you. We win together, grow together, and serve together as One Kabesera Café.

How we work together

Bayanihan

The old picture is neighbors carrying a bahay kubo. Here it is the pass, the bar, the deck, the close.

Zero silos. Total teamwork. We do not believe in the phrase “that is not my job.” Derived from bayani — hero — every person on the book can save the day for a coworker or a guest by stepping up without being asked.

    If the dining room is busy, the barista or the kitchen clears tables. If the bar is backed up, the server helps with prep. The station beside you is your station.

    Step in before you are asked. A hero shift that leaves the next station sinking is not bayanihan.

    Never leave a messy station for the next team. Clean bars, prepped ingredients, and stocked ice are how we set them up to win.

    A barista knows how to run food. A server can prep a basic beverage. Peak hours are lifted together.

Care that goes beyond duty. The café, the guest, and each other are family and home.

Malasakit is not a performance. It is treating this house as your living room, the guest as a neighbor, and the person beside you as someone you keep.

    The work of Net Zero 2050 sits on every station.

    Cut the kilo you can cut: sleeve, leftover rice, empty-deck lights, trim that should have been stock. Count what left your pass. Grow compost and named lots. Buy last is the steward’s Monday desk after close ticks — not a licence to throw a cup, not a cover for a skipped loop. This is the job. Not extra. Not a poster behind the till.

    Duty — Ceramic first. No plastic sleeve. Rice by mouths. Trim to stock or compost. Dark the unused room. Name the farm on the ticket. Return glass. Close the loop before you clock out.

    Accountable — Your station’s waste, energy, and named lot until handover. A sleeve you served is a kilo we count. A caddy you skipped is a miss we write.

    Guest feels: No foam. A named farm. A bottle that comes back. The ridge still looks like a ridge at 10pm.

    Care that is not performed. How we keep people.

    Malasakit is care beyond duty — guests, the house, and the person beside you, treated as family and home. Anticipate before they ask. Lights off, waste prevented, every corner as your living room. Check in on a tired neighbor. A complaint is a wound we close. A cheap vintage that moved people off land is a wound. Celebrating a neighbor’s life — pansit, a slice, a song — is malasakit that is not performed. Sustainability without malasakit is a sticker.

    Duty — Mabuhay in ten seconds. Allergen before the plate. Floor lead takes the wound — never the owner’s name. Coach a guest to the cup they brought. Pay the lot we named.

    Accountable — A guest name is a trust (R.A. 10173). A miss you hide in a smile is still a miss. Tell the lead.

    Guest feels: They were seen. The farm has a name. The complaint did not vanish into a smile.

  • 03 · Bayanihan

    How we work together. We lift the house. A late rush is not one person’s problem.

    Accountable — The pass you left is the pass the next person inherits. Appraisal scores the lift, not only your tray.

    Guest feels: The floor does not thin at 9pm. The same house that opened still holds.

  • 04 · Guest experience, every hour

    The highest level, consistently — open, peak, last pour.

    Six senses: sight, sound, smell, taste, touch, time. Mabuhay in ten seconds. Same warmth at breakfast and at last light. A compliment at sunset does not cover a cold Tuesday. This is how the guest tastes the three above. If they do not feel it, we only had slogans.

    Duty — Clean blacks. Named lot. Hot food hot. Wait said if it moves. No fake slash. No plastic sleeve. No owner’s name on the floor.

    Accountable — The hour you worked is the hour the guest will remember. Pabigas pays consistency, not a one-night hero.

    Guest feels: The cup, the chair, the minute. The ridge as a sanctuary — not a rush, not a performance.

How they hold each other

    A named lot and a returned glass are malasakit for the grower and the schoolroom. A thrown sleeve is a wound we chose. A vintage that harmed a barangay elsewhere is the same wound.

    Care that is not performed is the six senses. The guest is a neighbor, not a ticket. Time said honestly is malasakit. We do not sell them carbon-neutral.

How they hold the kilo

Malasakit decides which kilo. Bayanihan decides how we cut.

  • Malasakit — the quality bar

    Care that is not performed decides which kilo we grow, which we buy, and which we refuse to launder.

    • The land is a neighbor

      Ridge trees and ten-day soil first. A seedling we water for a year is malasakit. A seedling in a caption is not.

    • The grower is paid

      A named lot on the ticket is a cut (less far freight) and care (the peso stays). Distant ‘sustainable’ outsource is neither.

    • Hope is not a tonne

      Hope in a Bottle and the classroom project are malasakit for a child. They do not sit on the carbon bars. We do not sell a notebook as an offset.

    • No harm on the vintage

      A bought credit that displaced people, leaked, or was counted twice is a wound we chose. Same as hiding a guest complaint in a smile.

    • Do not shame the guest

      BYO is coached. A guest without a cup still gets ceramic. Malasakit is the pour, not a lecture.

  • Bayanihan — how the cut happens

    Neighbors lift the bahay kubo. Neighbors lift the loop. A steward cannot buy last for a floor that did not cut.

    • Close ticks are the cut

      Ceramic, caddy, rice, dark rooms, return glass, named lots, last pour as first. Everyone’s station. On the clock.

    • No hero credit

      A tree planted on a day off does not cover a month of sleeves. Pabigas green-lock: guest 4+ and green 4+.

    • Rain freeze is a shared cut

      Empty decks dark. Skeleton named and paid. Unpaid Viber is not bayanihan and not a kilo avoided.

    • The pass writes the kilo

      Count is a lift. One book. The steward hashes what the floor wrote — they do not invent a year.

    • Buy last is a Monday desk

      After the month’s ticks. Named vintage. The house decides. Not a private rescue of a skipped loop.

    Malasakit. The grower is paid. The classroom is not laundered as carbon.

    Bayanihan. Refuse and cut become everyone’s station.

    Close ticks, Monday desk, Gold Standard gate, pay sync

    Shift close ticks are the cut. Buy last is a first-Monday desk after ticks — no invoice if the caddy stayed in. Every serial is graded: house removal is not Gold Standard; a bought kilo without a GS-ID / CCP label fails. Crew payroll writes the slip from the 201, the leave file, night hours, and named pabigas — one book, not a separate envelope.

    Malasakit. No junk tonne. No GS badge on a ridge tree. Leave filed is leave on the slip.

    Bayanihan. Ticks before any credit. The People desk and the steward read the same week.

  4. 2027 · next

    Intensity down

    Kilos per visit fall. Freight mapped to named lots. Rain freeze and dark rooms held through typhoon months. Residual still small. First GS-eligible buy only if ticks held all year and the residual is named.

    Malasakit. A first vintage must still pass no-harm and additionality.

    Bayanihan. New crew walk the same ticks. Academy hours stay on the clock.

  5. 2028–2030 · next

    Deep cuts · residual stays residual

    House intensity still falling as visits grow. Offsets do not scale with covers. Bought slice, if any, is Gold Standard / ICVCM CCP and shrinking as a share.

    Malasakit. Claims stay smaller than the work. Still not carbon-neutral.

    Bayanihan. Loop keeper and pabigas still lock on green + guest.

  6. 2035–2040 · next

    Removals rise · durable only

    Ridge trees and soil carry more of the residual. Any bought credit shifts to long-lived storage — not a short-lived avoidance. Oxford step three, in the house.

    Malasakit. A reversal buffer on a tree we watered is still a neighbor, not a photo.

    Bayanihan. Watering and close ticks are named tasks, not a Saturday volunteer.

  7. 2050 · pledge

    Net Zero year

    Only a true residual remains. Matched by durable removal. Counted, not claimed. The café is net zero on the bars.

    Malasakit. The guest in 2050 still eats on this ridge.

    Bayanihan. The floor that opened in 2024 still closes the loop.

  1. 00 · Refuse

    Foam, plastic sleeve, glitter balloon, distant ‘sustainable’ wrap on a local fruit — never enter the house. A kilo we never emit is not an offset. It is the work.

    Malasakit. The grower is not asked to pack in imported film so we look green. The guest is not sold a balloon that becomes a wound in the bay.

    Bayanihan. Every station refuses the same list. One till that still issues a sleeve breaks the house.

    Never: A refused kilo later bought back as a credit.

  2. 01 · Cut

    Ceramic first. Rice by mouths. Trim to stock. Dark empty rooms. Rain freeze on unused decks. Named lot, not far freight. Close ticks before clock-out.

    Malasakit. Leftover rice is a mouth we did not honor. An empty deck left lit is the ridge paying for our forgetfulness.

    Bayanihan. The caddy, the dark rooms, the next station — everyone’s pass. The steward does not cut for you.

    Never: Buying a vintage the same week the compost caddy stayed inside.

  3. 02 · Count

    Emitted, avoided, sequestered, bought — hashed to the block before. A serial can be proved. We do not claim a year we have not counted.

    Malasakit. A fake net-zero year is a wound to the guest who trusted the pledge. Honesty is care.

    Bayanihan. The pass writes the kilo. The steward hashes it. One book, not a hero spreadsheet.

    Never: A visit sold as ‘carbon neutral.’ A latte that cancelled a Grab.

  4. 03 · Grow — ridge removals

    Native trees on the cliff. Compost that becomes soil in ten days. Slow, here, ours. These kilos sit before any bought credit.

    Malasakit. The land under the deck is a neighbor. A seedling without a year of water is a photo, not a removal.

    Bayanihan. Walk the trees. Water is a named task, not a Saturday volunteer. Compost leaves with the close.

    Never: A tree photo used as a licence to throw a cup.

  5. 04 · Buy last — residual only

    A third-party vintage for the kilo we still emit after refuse, cut, and grow. Named registry, vintage, serial, kind. Retired on the ridge chain. Intensity does not rise with visits.

    Malasakit. No project that displaces a barangay. No cheap avoidance we cannot explain. Additional, not leaked, counted once. The Integrity Council’s Core Carbon Principles are the supply bar.

    Bayanihan. Buy last is a house decision on the first Monday, after close ticks. Not a steward’s private purchase to cover a skipped loop.

    Never: Avoidance credits as a licence to emit. Volume over quality. A vintage we cannot name.

  6. 05 · 2050 residual

    Registry, vintage year, serial, kind — avoidance or removal. Retired on the house chain. A kilo without a name is not a kilo.

    Additional. Permanent enough. Not leaked. Counted once. ICVCM Core Carbon Principles are the bar. We do not shop the cheapest tonne.

  • Malasakit on the project

    No credit from a project that moved people off land, or a cookstove that was already going in. Care for the person elsewhere is the same care as the grower on this ridge.

  • Bayanihan before the invoice

    Close ticks for the month first. If the floor skipped the loop, we do not buy. We coach, then write. A credit is not a cover.

  • Residual only, intensity down

    Bought kilos do not grow as visits grow. Oxford: offsets support the transition; they do not cancel a year of diesel. By 2040 the bought slice shifts to durable removal. By 2050 that is all it is.

  • Claims stay smaller than the work

    VCMI: we do not say carbon-neutral café, carbon-neutral stay, or carbon-neutral latte. We say cut, count, grow, buy last — and show the bars.

Net Zero 2050 is a path, not a year we skip to. Oxford Offsetting Principles and the ICVCM quality bar sit under this house language: a credit never replaces a cut. Malasakit is the quality bar. Bayanihan is how the cut lands.

    Ridge removals.

    Native trees on the cliff, compost that becomes soil. These are our own removals — slower than a bought credit, and they stay here.

    Only the residual.
